The one good thing about the last month of summer ending is FOOTBALL! Yes, football fans rejoice because the end of August means tailgating, team colors and hollerin’ at the TV or football field! I love doing all of the above, but there’s something I just LOVE about football food! It gives me an excuse to make homemade comfort food and share it with my friends and family. So for this post I’ve rounded up my favorite blogs/websites for tailgating foods and included a recipe of my own.
The recipe is for my Greek Pizza Dip. I made this recipe up when I had an abundance of cherry tomatoes and a party to go to. It’s hearty and summery but cheesy and filling.
Start by softening the cream cheese. This is REALLY important because if the cc isn’t soft enough it won’t mix correctly. When it’s ready add the dressing mix and mayo.
Then chop up your tomatoes and add them over the cream cheese mixture.
Next sprinkle pesto, cheese, olives and red pepper over the cream cheese layer.
Finish by baking in the oven until golden brown. Serve with pita chips or bread/bread sticks.
Greek Pizza Dip Recipe:
1 pkg cream cheese
1 pkg Italian dressing mix
½ c mayo
2-3 T. pesto
¼ – ½ c Kalamata olives (pitted)
I pint cherry tomatoes
½ c. shredded mozzarella
¼ c. feta (optional)
crushed red pepper (optional)
Start by mixing softened cream cheese with dressing mix and mayo. Sprinkle fresh (or roasted) cherry tomatoes over the mixture. Add pesto in dollops all over then sprinkle remaining ingredients over the top. Bake at 400 for 20-35 min until cheese is browned and bubbly. Serve with pita chips or breadsticks.
